This city is in the Aveyron department in France (in the south). There are several cheese factories that can be visited. The most famous one is "Roquefort Société" (http://www.roquefort-societe.com/); this is where you will see the biggest caves. However the visit is made with large groups which may be annoying. In the city you can find other smaller factories to visit which are worth trying.

All the Roquefort cheese that you can buy all over the world is made in this part of France (in French we say “king of cheese, cheese of kings”). When you visit the caves, you can learn how this particular cheese is made. Since you are underground, be sure to bring lenses with high-aperture. Wide-angle lenses (lower than 35mm) will also be more interesting than tele-lenses. Tripods are forbidden in most of the places.
